Preparation

  • Heat the olive oil in a large skillet over medium heat until it shimmers.
  • Add the sliced chicken breasts and cook until browned and cooked through, about 5-7 minutes.
  • Stir in the minced garlic and mixed vegetables; sauté for another 4-5 minutes until the vegetables are tender but still vibrant.
  • Stir in dried oregano, basil, salt, and pepper to taste.
  • Serve the stir fry hot with lemon wedges on the side.

Notes

Store leftovers for up to 3 days in an airtight container. Reheat in a skillet over medium heat. For customization, consider adding red pepper flakes for spice or swapping in different proteins or veggies.
