  • 2 cups butter beans (canned or cooked) If using canned, drain and rinse.
  • 1/4 cup olive oil Extra virgin is recommended for better flavor.
  • 2 tablespoons lemon juice Can be substituted with vinegar if needed.
  • 2 cloves garlic, minced Let sit for a few minutes after mincing.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh herbs (like parsley or thyme) Dill or basil can also be used.

Instructions
 

Preparation of the Butter Beans

  • If using canned butter beans, drain them and rinse under cold water.
  • If using cooked beans, ensure they are cooled.

Make the Marinade

  • In a large bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper until well combined.

Combine Beans with Marinade

  • Carefully add the prepared butter beans to the bowl and gently toss to coat them evenly with the marinade.

Add Fresh Herbs

  • Sprinkle in your choice of fresh herbs and mix to incorporate.

Marinate

  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes before serving.

Serve

  • Serve as a side dish, or incorporate into salads.

Notes

Store in an airtight container in the refrigerator for up to 4 days. For best results, let the beans marinate for a few hours or overnight.
