  • 3 tablespoons ricotta cheese This adds a creamy texture and rich flavor.
  • 1/8 teaspoon salt
  • 2-3 cloves garlic (pressed or minced) Use fresh garlic for stronger flavor.
  • 3 large eggs Provides structure and stability.
  • 1/4 teaspoon cream of tartar Helps to stabilize egg whites.

Preparation

  • Preheat your oven to 300°F (150°C).
  • Combine ricotta cheese, salt, and garlic in a mixing bowl until well mixed.
  • Separate egg yolks from whites, adding yolks to the ricotta mixture and stir until well incorporated.
  • Beat egg whites with cream of tartar until stiff peaks form.
  • Gently fold the whipped egg whites into the ricotta mixture.
  • Line baking sheets with parchment paper and drop batter using a 1/4 cup measure to form rounds.
  • Bake for about 30 minutes or until tops are golden brown.
  • Allow the cloud bread to cool slightly before serving.

Notes

Store in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Toast before serving for a crispy edge.
