  • 1 large head cauliflower, chopped Fresh or thawed frozen cauliflower works.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth Use homemade broth if available.
  • 1 cup heavy cream or milk Heavy cream for richness; milk for lighter option.
  • 1 cup shredded cheddar cheese Substitute with Gruyère or feta if desired.
  • 2 stalks green onions, chopped For garnish.
  • Salt and pepper to taste
  • Bacon bits for topping (optional)

Preparation

  • In a large pot, heat a splash of oil over medium heat. Add the diced onion and minced garlic, cooking until translucent (about 5-7 minutes).
  • Stir in the chopped cauliflower and pour in the broth. Bring the mixture to a boil.
  • Reduce the heat and let the pot simmer until the cauliflower is tender, about 15-20 minutes.
  • Using an immersion blender, puree the soup until it reaches your desired smoothness.
  • Return to low heat, then stir in heavy cream and shredded cheddar cheese until melted.
  • Taste your soup and add salt and pepper as necessary.
  • Serve hot, garnished with chopped green onions and bacon bits, if using.

Notes

This soup can be stored in the refrigerator for up to 3 days. Feel free to customize with additional vegetables or spices.
