Ingredients
  

For the Crust

  • 2 cups all-purpose flour Can use gluten-free flour for a variation.
  • 1 cup melted butter
  • 1/2 cup pecans (chopped) Consider toasting for more flavor.
  • 1/4 cup granulated sugar

For the Cream Cheese Layer

  • 16 ounces cream cheese (softened) Alternatively, use Neufchâtel cheese for fewer calories.
  • 1 cup powdered sugar

For the Lemon Pudding Layer

  • Juice from 1 lemon Fresh juice enhances flavor.
  • 2 packages instant lemon pudding mix (3.4 ounces each)
  • 2 cups milk Whole milk is recommended for creaminess.

For the Topping

  • 8 ounces whipped topping Freshly whipped cream can be used instead.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine all-purpose flour, melted butter, chopped pecans, and granulated sugar. Mix well until thoroughly combined.
  • Firmly press the crust mixture into the bottom of a greased 9x13 inch baking dish and bake for about 20 minutes or until golden brown.
  • In another bowl, beat softened cream cheese and powdered sugar together until smooth. Spread this mixture evenly over the cooled crust.
  • In a separate bowl, whisk together instant lemon pudding mix and milk until the mixture thickens, which should take about 2 minutes.
  • Pour the thickened lemon pudding over the cream cheese layer, spreading it evenly.
  • Spread whipped topping evenly over the lemon pudding layer.
  • Refrigerate the Lemon Lush Dessert for at least one hour before serving.

Notes

Keep refrigerated for up to 3 days in an airtight container. For longer storage, freeze leftovers for up to a month.
