  • 4 pieces fresh fish (snapper, grouper, bass, tilapia or cod) Choose fish that are fresh with clear eyes.
  • 4 tablespoons butter, melted This will be part of the marinade.
  • 1 teaspoon garlic powder Provides concentrated garlic flavor.
  • 1 teaspoon Italian seasoning Enhances flavors; can swap with fresh herbs.
  • 1 teaspoon paprika Adds color and a subtle smokiness.
  • 3 tablespoons fresh lemon juice Provides acidity and flavor.
  • to taste none sea salt Season to your preference.
  • to taste none black pepper Season to your preference.
  • 2 tablespoons minced garlic To stuff inside the fish.
  • 1 none lemon, sliced For stuffing and garnish.
  • to taste none dry parsley Adds a touch of earthiness.

Instructions
 

Preparation

  • Choose fresh fish; look for clear eyes and mild, briny aroma.
  • Preheat your oven to 400°F (204°C).
  • Rinse the fish under cold water and pat dry with paper towels.
  • Make three or more diagonal slits on both sides of each fish.
  • In a bowl, combine melted butter, garlic powder, Italian seasoning, paprika, lemon juice, sea salt, and black pepper.
  • Brush the marinade generously over the fish, ensuring to get inside the slits and cavity.
  • Stuff the cavity with minced garlic, lemon slices, and optionally onions.
  • Sprinkle extra paprika, salt, and dry parsley over the fish.

Cooking

  • Place the prepared fish in a roasting pan and cook in the preheated oven for about 30 minutes.
  • Check that the flesh flakes easily with a fork for doneness.
  • Drizzle more lemon juice and pan drippings over the fish before serving.
  • Garnish with fresh parsley or other herbs.

Notes

Best enjoyed immediately, avoid overcooking. Use a meat thermometer to ensure internal temperature reaches 145°F (63°C).
