  • 2 cups chicken broth Use vegetable broth for a vegan option.
  • 1 cup mixed vegetables (like bell peppers, carrots, and peas) Frozen mixed vegetables can be used.
  • 2 tablespoons olive oil For cooking the chicken.
  • 2 cloves garlic, minced Essential for flavor.
  • 1 lemon juiced and zested Fresh lemon enhances flavor.
  • to taste Salt and pepper Adjust according to preference.
  • for garnish Fresh parsley Optional, for serving.

Preparation

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the diced chicken and cook until golden brown on all sides, about 5-7 minutes.
  • Stir in 2 minced garlic cloves and 1 cup of mixed vegetables. Sauté for about 2-3 minutes.
  • Add 1 cup of orzo pasta, 2 cups of chicken broth, and the juice and zest from 1 lemon. Season with salt and pepper.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 10-12 minutes.
  • Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for up to 2 months.
