  • 1 package lemon pudding mix This provides the vibrant lemon flavor.
  • 2 cups milk
  • 1 cup heavy cream For a lighter version, substitute with whipped topping or yogurt.
  • 1/2 cup powdered sugar Used to sweeten the whipped cream.
  • 1 cup blueberries Fresh blueberries are key for flavor and texture.

Crust Ingredients

  • 1 cup crushed graham crackers Can be swapped for digestive biscuits, vanilla wafers, or gluten-free options.
  • 1/4 cup butter (melted)
  • 1 tablespoon lemon juice

Preparation

  • Combine the lemon pudding mix and milk in a medium-sized bowl. Whisk until smooth and free of lumps.
  • In another bowl, whip the heavy cream with powdered sugar until soft peaks form.
  • Fold the whipped cream into the lemon pudding mixture gently until well combined.
  • In a separate bowl, mix the crushed graham crackers, melted butter, and lemon juice until combined.
  • In a serving dish, layer the graham cracker mixture at the bottom, followed by the lemon pudding mixture. Top with fresh blueberries.
  • Repeat the layers if desired, until you reach the top of your dish.
  • Chill in the refrigerator for at least 2 hours before serving.

Notes

For a more striking presentation, reserve some blueberries to sprinkle on top just before serving. This dessert is best served chilled and doesn’t require reheating.
