  • 1 cup cottage cheese Use low-fat cottage cheese if looking for a lighter option.
  • 1/2 cup rolled oats
  • 1/2 cup blueberries (fresh or frozen) Dried slightly if using frozen to prevent excess moisture.
  • 2 tablespoons honey or maple syrup Agave syrup can be used as an alternative.
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • pinch salt

Instructions
 

Preparation

  • In a mixing bowl, add the cottage cheese, rolled oats, honey or maple syrup, lemon juice, lemon zest, vanilla extract, baking powder, and a pinch of salt. Mix well until everything is fully combined.
  • Gently fold in the blueberries using a spatula. Be careful not to mash them.
  • Scoop out the mixture and form small balls, placing them on a lined baking sheet.
  • Refrigerate the bites for at least 30 minutes to firm up and make them easier to handle.
  • Once chilled, serve as a healthy snack!

Notes

For an extra zing, sprinkle some lemon zest on top before serving. Pack them in a small container for an on-the-go snack.
