  • 1 bunch kale The star of the dish; can substitute with spinach or arugula if needed.
  • 2 tablespoons olive oil Can be replaced with avocado oil or other neutral oils.
  • 1 lemon (juiced) If out of lemons, a splash of apple cider vinegar can be used.
  • 1/4 cup grated Parmesan cheese Use freshly grated for better flavor.
  • Salt and pepper to taste Adjust according to preference.

Preparation

  • Remove the stems from the kale and tear the leaves into bite-sized pieces.
  • In a large bowl, massage the kale with olive oil until the leaves are tender.
  • Add the lemon juice and toss to coat.
  • Sprinkle with grated Parmesan cheese, and season with salt and pepper.
  • Serve immediately.

Notes

Store in the refrigerator for up to 2 days in an airtight container. It’s best to keep the cheese aside until ready to eat to prevent sogginess.
