  • 4 cloves garlic, minced Increase to 6 cloves for a richer flavor.
  • 2 tablespoons fresh rosemary, chopped Mix and match with oregano or parsley if desired.
  • 2 tablespoons fresh thyme, chopped Can be replaced with dried herbs (1 teaspoon dried equals 1 tablespoon fresh).
  • 1 tablespoon salt Essential for enhancing the beef's natural flavors.
  • 1 teaspoon black pepper

Preparation

  • Preheat the oven to 425°F (220°C).
  • Pat the beef tenderloin dry with paper towels and remove any silver skin if necessary.
  • In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper.
  • Rub the herb mixture all over the beef until evenly coated.
  • Place the beef in a roasting pan on a rack.

Cooking

  • Roast in the preheated oven for about 25-30 minutes for medium-rare (aiming for an internal temperature of 135°F/57°C).
  • Let it rest for at least 10 minutes after removing it from the oven.
  • Slice against the grain into thick slices and serve.
