  • 4 cloves garlic, minced

  • 2 tablespoons fresh thyme, chopped You can substitute with dried thyme.
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 375°F (190°C).
  • Pat the beef roast dry with paper towels and season all sides generously with salt and pepper.
  • In a small bowl, mix together minced garlic, rosemary, thyme, and olive oil.
  • Rub the herb mixture all over the roast, ensuring it’s well coated.
  • Let the seasoned roast sit at room temperature for about 30 minutes.

Cooking

  • Place the roast in a roasting pan and cook in the preheated oven for about 1.5 to 2 hours.
  • Check doneness with a meat thermometer; aim for about 135°F for medium-rare.
  • Once done, remove the roast from the oven and let it rest for 15-20 minutes before slicing.
