  • In a large pot, cook the Italian sausage over medium heat until browned, breaking it apart with a spoon.
  • Drain excess fat for a lighter soup.
  • Add the chopped onion and garlic to the pot, cooking until soft, about 3-5 minutes.
  • Add the diced potatoes and pour in the chicken broth. Stir together and bring to a boil.
  • Add the Italian seasoning, salt, and pepper. Reduce heat and let simmer for about 20-25 minutes until potatoes are tender.
  • Once cooked, stir in the heavy cream and allow it to warm through.

Notes
