  • 2 medium zucchinis You can substitute with yellow squash.
  • 1 cup breadcrumbs (Italian or panko) Plain breadcrumbs can also work; adding dried herbs can mimic the flavor.
  • 1 cup grated Parmesan cheese Freshly grated cheese is recommended; nutritional yeast can be a dairy-free substitute.
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • Cooking spray or olive oil for baking

Preparation

  • Preheat your oven to 425°F (220°C). Use parchment paper on your baking sheet for easier cleanup.
  • Wash the zucchinis and cut them into 1-inch rounds for even cooking.
  • In one bowl, beat the eggs. In two separate bowls, place one with breadcrumbs mixed with garlic powder, onion powder, salt, and pepper, and the other with grated Parmesan cheese.

Coating and Baking

  • Dip each zucchini piece into the egg, then into the breadcrumb mixture, and finally coat with Parmesan.
  • Arrange the coated zucchini bites on the baking sheet, spray lightly with cooking spray or drizzle with olive oil, and bake for 20-25 minutes until golden brown and crispy.
  • Remove from the oven and let them cool for a few minutes before serving.

Notes

Serve with marinara or ranch for dipping. Can be customized with different seasoning or make it spicy by adding red pepper flakes.
