  • 4 large potatoes, peeled and diced Russet or Yukon Gold are great choices
  • 1 small head of cabbage, chopped
  • 1 onion, diced

Broth and Seasoning

  • 4 cups chicken or vegetable broth Homemade broth enhances flavor
  • to taste Salt and pepper Adjust according to preference

Meat and Fat

  • 4 slices of smoky bacon, chopped Turkey bacon or pancetta can serve as alternatives
  • 2 tablespoons butter For sautéing vegetables

Garnish (optional)

Instructions
 

Preparation

  • In a large pot, melt the butter over medium heat.
  • Add the chopped bacon and cook until crispy.
  • Add the diced onion and sauté until soft, about 3-4 minutes.

Cooking

  • Stir in the diced potatoes and chopped cabbage, cooking for an additional 5 minutes.
  • Pour in the broth and bring the mixture to a boil.
  • Reduce the heat and let it simmer until the potatoes are tender, about 20 minutes.
  • Add salt and pepper to taste.
  • Serve hot, garnished with chives if desired.

Notes

This soup can be frozen and reheated. Ensure to store in airtight containers and cool completely before freezing. Can add alternative garnishes like shredded cheese or sour cream.
