  • 1 cup white rice Adjust cooking time if using brown rice.
  • 1 cup shredded cheese Use a mix for more flavor, e.g., cheddar and Monterey Jack.
  • 1 cup corn Optional, can be added for extra texture and sweetness.

Preparation

  • Set the Instant Pot to sauté mode. Brown the ground beef, breaking it up with a wooden spoon.
  • Drain excess fat, if necessary, or use a fat separator.
  • Add diced tomatoes, taco seasoning, beef broth, and white rice. Stir well.
  • Close and lock the Instant Pot lid, ensuring the valve is set to sealing. Cook on high pressure for 10 minutes.
  • Allow natural pressure release for 10 minutes, then quick release any remaining steam.
  • Stir in the shredded cheese until melted.
  • Season with salt and pepper to taste before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months. Adding toppings like sour cream or guacamole enhances flavor.
