Brownie Ingredients

  • 8 oz high-quality dark chocolate (at least 70% cocoa) Use high-quality dark chocolate for best flavor. Semi-sweet chocolate can be substituted if needed.
  • ½ cup unsalted butter Ensure the butter is unsalted for balanced flavor.
  • 1 cup granulated sugar Helps to create the brownie texture.
  • 3 large eggs Room temperature eggs work best.
  • ½ cup all-purpose flour For best results, do not overmix.
  • 2 tbsp instant coffee granules Enhances the chocolate flavor. Can be omitted for a caffeine-free version.
  • 1 cup mascarpone cheese Brings richness; can substitute with a mixture of cream cheese and sour cream.
  • 2 tbsp unsweetened cocoa powder Used for dusting and added chocolate flavor.

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
  • In a heat-proof bowl, melt the dark chocolate and butter together until smooth. Allow it to cool slightly.
  • Stir in the granulated sugar until well combined with the chocolate mixture.
  • Add the eggs one at a time, whisking until fully incorporated after each addition.
  • In a separate bowl, mix the all-purpose flour and instant coffee granules together. Gently fold into the wet ingredients until just combined.
  • Pour half of the brownie batter into the prepared dish. Drop dollops of mascarpone cheese evenly across the batter, then cover with the remaining batter.

Baking

  • Bake in the preheated oven for 25-30 minutes. The edges should be firm, but the center should remain slightly soft.
  • Let the brownies cool completely in the dish before slicing them into squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week. These brownies can also be frozen for longer storage.
