For the Baklava Rolls

Instructions
Preparation
Preheat the oven to 350°F (175°C).
In a bowl, combine the chopped walnuts, sugar, and cinnamon to make the filling.
Layer the phyllo dough by placing a sheet on a baking sheet and brushing with melted butter. Repeat for several layers.
Place a line of the walnut filling along one edge of the layered phyllo.
Roll the phyllo dough over the filling, tucking in the sides as you go.
Brush the top with melted butter and lightly score the top with a knife.
Bake for 25-30 minutes until golden brown.
Syrup Preparation
In a saucepan, mix the honey, water, and vanilla extract and bring to a boil.
Pour the syrup over the hot baklava rolls and let them soak for several hours before serving.
Notes
For best flavor, let the rolls sit overnight in the syrup. Store in an airtight container in the fridge for up to one week.
