Ingredients
  

For the Chicken and Marinade

  • 2 pieces chicken breasts Chicken thighs can be substituted for a juicier option.
  • 1/4 cup honey Maple syrup or agave nectar can be used as alternatives.
  • 2 tablespoons lime juice Fresh lime juice is recommended for best flavor.
  • 1 tablespoon olive oil Used for marinating and cooking.
  • Salt to taste salt
  • Pepper to taste pepper

For the Bowl

  • 2 cups cooked rice Can be substituted with quinoa for added protein.
  • 1 cup mixed fresh vegetables (bell peppers, broccoli, carrots) Feel free to customize with available veggies.
  • Chopped cilantro to taste chopped cilantro Optional garnish for added flavor.

Preparation

  • In a medium bowl, mix together the honey, lime juice, olive oil, salt, and pepper to create the marinade.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Allow to marinate for at least 30 minutes.

Cooking

  • Heat a bit of olive oil in a large skillet over medium-high heat.
  • Cook the marinated chicken in the skillet for about 5-7 minutes on each side, or until the internal temperature reaches 165°F.
  • Remove the chicken and let it rest for a few minutes before slicing.
  • In the same skillet, add the mixed vegetables and sauté for 3-5 minutes until tender.
  • Layer the cooked rice on plates, top with slices of honey lime chicken, and add the sautéed vegetables on top.

Garnish

  • If desired, garnish each bowl with freshly chopped cilantro.

Notes

This bowl is great for meal prep and can be stored in the refrigerator for up to 3 days. Freezing is possible for cooked chicken, excluding rice and veggies.
