Ingredients
  

For the marinade

  • ½ cup honey Can be substituted with maple syrup.
  • ¼ cup soy sauce Low-sodium soy sauce or tamari can be used for a healthier option.
  • 3 cloves garlic (minced) Fresh garlic yields the best flavor.
  • Juice of one small lemon For added flavor.

For the scallops

  • 1 pound large scallops Large scallops are preferred; adjust cooking time for medium scallops.
  • 2 tablespoons butter Melted for cooking scallops.
  • Green onions to taste for garnish Add freshness and color.

Preparation

  • In a small bowl, whisk together honey, soy sauce, minced garlic, and lemon juice to make the marinade.
  • Pour half of the marinade over the scallops in a separate bowl and let them marinate in the fridge for 30 minutes.

Cooking

  • In a skillet over medium-high heat, melt the butter until it bubbles.
  • Add the marinated scallops to the skillet, seasoning with salt and pepper, and sear for about 3-3½ minutes on each side until golden brown.
  • Once cooked, pour the reserved marinade into the skillet and let it thicken slightly.
  • Return the cooked scallops to the skillet, ensuring they are well coated in sauce.
  • Garnish with chopped green onions before serving.

Notes

Serve immediately with rice or a fresh salad. Store leftovers in an airtight container for up to 2 days.
