  • 4 medium potatoes, sliced thinly Overlap for even cooking.
  • 2 cups shredded cheddar cheese Combine with mozzarella or pepper jack for variation.
  • 1 can cream of mushroom soup Use vegan alternatives or homemade versions for a dairy-free option.
  • to taste salt and pepper Season generously for added flavor.
  • as needed tablespoons olive oil For cooking the meat.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat some olive oil over medium heat and add the ground beef or turkey. Cook until browned.
  • Add diced onion to the skillet with the meat and cook until soft, about 5 minutes.
  • Stir in the mixed vegetables and cook for another 3-4 minutes until tender.
  • In a large baking dish, layer sliced potatoes at the bottom and season with salt and pepper.
  • Pour the meat and vegetable mixture over the potatoes, spreading it evenly.
  • Drizzle the cream of mushroom soup over the meat and veggies, spreading gently.
  • Sprinkle shredded cheddar cheese generously over the top.

Baking

  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Notes

Allow casserole to set for a few minutes post-baking for better layering. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months.
