Ingredients
  

Vegetable Base

  • 2 tablespoons olive oil Can substitute with avocado oil or coconut oil.
  • 1 number onion, diced
  • 2 number carrots, sliced
  • 2 number celery stalks, diced
  • 3 cloves garlic, minced Add after heartier vegetables.
  • 1 number zucchini, diced
  • 1 number bell pepper, diced
  • 14 ounces canned diced tomatoes
  • 4 cups vegetable broth Homemade stock can enhance flavor.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • for garnish fresh parsley, chopped

Instructions
 

Preparation

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the diced onion, sliced carrots, and diced celery. Cook until softened, about 5 minutes.
  • Stir in the minced garlic, diced zucchini, and bell pepper. Cook for another 3-4 minutes until fragrant.
  • Pour in the canned diced tomatoes and 4 cups of vegetable broth. Add oregano, basil, salt, and pepper.
  • Increase heat and bring to a boil, then reduce heat to low and let simmer for 20-25 minutes.
  • Taste and adjust seasoning as needed.
  • Ladle the soup into bowls and garnish with fresh chopped parsley.

Notes

This soup is versatile; you can add seasonal vegetables, use homemade or low-sodium broth, and customize with proteins or grains if desired.
