  • 1 cup cottage cheese Can be substituted with silken tofu for a lactose-free option.
  • 6 large eggs For a vegan option, consider using flax eggs or chia eggs.
  • 1 cup spinach, chopped Can be replaced with kale or Swiss chard.
  • 1 medium bell pepper, diced Use any variety desired.
  • ½ cup shredded cheese Cheddar or mozzarella works best.
  • 1 teaspoon garlic powder Adjust to taste.
  • to taste salt and pepper Season to your preference.

Optional Garnish

  • fresh herbs Use for garnishing before serving.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine cottage cheese and eggs, and whisk until well blended.
  • Add chopped spinach, diced bell pepper, shredded cheese, garlic powder, salt, and pepper to the egg mixture. Stir to combine.
  • Pour the mixture into a greased baking dish (9x9 or similar size).

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the center is set and the edges are golden.
  • Let it cool for a few minutes before slicing.

Notes

Serve with a side salad or fresh fruit. Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 2 months.
