Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • Slice the red bell peppers, zucchini, and red onion into strips.
  • In a mixing bowl, toss the sliced vegetables with olive oil, salt, and pepper.

Grilling

  • Place the seasoned vegetables directly on the grill and cook for about 4-5 minutes per side until tender.

Hummus Spread

  • In a mixing bowl, combine hummus, lemon juice, and garlic powder. Mix until fully incorporated.

Assembly

  • Lay a tortilla flat and spread a generous layer of hummus.
  • Top with fresh spinach and grilled veggies.
  • If using, sprinkle feta cheese over the veggies.
  • Roll the tortilla up while folding in the sides.

Notes
