  • 4 medium medium-sized zucchinis Can be substituted with yellow squash.
  • 1/4 cup unsalted butter, melted Unsalted allows for better control over saltiness; can use olive oil.
  • 4 cloves garlic, minced Fresh garlic provides the best flavor but garlic powder can be used.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped For garnish.

Preparation

  • Preheat your grill to medium-high heat, around 400°F.
  • Wash and trim the ends of the zucchinis. Cut them in half lengthwise.
  • In a small bowl, combine melted butter, minced garlic, salt, and pepper. Mix well.
  • Using a pastry brush, generously coat the cut sides of the zucchini with the garlic butter mixture.

Grilling

  • Place the zucchini cut side down on the grill. Grill for about 4-5 minutes.
  • Flip the zucchini and grill for another 3-4 minutes until tender.
  • Remove from the grill and drizzle with any remaining garlic butter, sprinkling with chopped parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator. Best reheated on the grill or in a skillet.
