  • 1/4 cup chia seeds These tiny seeds expand and thicken the Greek yogurt mixture, adding fiber.
  • 1 cup fresh berries You can use strawberries, blueberries, or raspberries.
  • 1-2 tablespoons honey or maple syrup Optional sweetener to taste.
  • 1 teaspoon vanilla extract Optional flavor enhancer.

Preparation

  • In a mixing bowl, combine the Greek yogurt, chia seeds, honey or maple syrup, and vanilla extract if using.
  • Mix until the chia seeds are evenly distributed throughout the yogurt.
  • Let the mixture sit for about 10-15 minutes to thicken.
  • Once thickened, evenly distribute the mixture into small cups or jars.
  • Add your fresh berries on top of each cup.
  • Cover the cups and refrigerate for at least 2 hours or overnight.
  • Serve and enjoy these healthy snack cups anytime.

Notes

These snack cups are great on their own but can be paired with smoothies or granola bars. They keep fresh in the fridge for up to 5 days and can be frozen for up to 2 months.
