  • 1 cup Feta cheese For a dairy-free option, swap with nutritional yeast or vegan feta.
  • 1/4 cup Olive oil Additional for brushing to ensure crispiness.
  • 3 cloves Garlic Minced for better flavor infusion.
  • 2 teaspoons Oregano Preferably fresh for more vibrant flavor.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the golden potatoes into wedges, about 1 to 1.5 inches thick.
  • Add blistered peppers to the baking sheet.

Cooking

  • Drizzle with olive oil and sprinkle minced garlic, oregano, salt, and pepper over the top.
  • Toss everything together until coated.
  • Crumble feta cheese over the top.
  • Roast in the oven for 30-35 minutes or until the potatoes are tender and golden brown. Turn the potatoes halfway through roasting.
  • Serve hot with optional garnishes of oregano or a squeeze of fresh lemon juice.

Notes

To ensure crispiness, do not overcrowd the baking sheet and consider using fresh herbs. Leftovers can be stored in an airtight container for up to 4 days.
