Ingredients
  

For the Fries

  • 4 medium Russet potatoes You can substitute with Yukon gold potatoes
  • 4 cups Vegetable or olive oil for frying Olive oil has a lower smoke point

For the Toppings

  • 1 cup Feta cheese, crumbled Use goat cheese as a substitute
  • 1 tablespoon Fresh parsley, chopped Can add other herbs like oregano or dill
  • 1 tablespoon Fresh oregano, chopped Optional addition for extra flavor

For the Drizzle

  • 2 tablespoons Fresh lemon juice Freshly squeezed is best
  • 2 cloves Garlic, minced Adjust to taste
  • 1 teaspoon Salt For seasoning the drizzle and fries
  • 1 teaspoon Pepper For seasoning the drizzle

Instructions
 

Preparation

  • Wash and peel the potatoes (if desired), then cut them into even sticks, about 1/4 inch thick.
  • Soak the cut fries in cold water for 30 minutes.

Cooking the Fries

  • Heat the oil in a deep fryer or large pot to 350°F (175°C).
  • Fry the potato fries in batches until golden brown and crispy, about 4-5 minutes per batch.
  • Drain the fries on paper towels and sprinkle with salt immediately.

Preparing the Drizzle

  • Mix together the lemon juice, minced garlic, salt, and pepper in a small bowl.

Serving

  • While the fries are still hot, sprinkle with feta cheese and fresh herbs.
  • Drizzle the lemon garlic mixture over the fries and serve immediately.

Notes

Store fries in an airtight container for up to three days. Freeze for long-term storage.
