Greek Chicken and Lemon Rice

Main Ingredients

  • 1 pound chicken thighs or breasts Bone-in chicken can be used for extra flavor.
  • 2 cups chicken broth Can substitute with vegetable broth.
  • 1 cup long-grain rice Jasmine or basmati rice can also be used.
  • 1 whole lemon Zested and juiced.
  • 2 tablespoons olive oil
  • 3 cloves garlic Minced.
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat. Season the chicken with salt, pepper, and dried oregano.
  • Add the chicken to the pot and cook until browned on both sides, about 5-7 minutes per side.
  • Remove the chicken and set aside. Sauté the minced garlic in the same pot for about 30 seconds.
  • Add 1 cup of rice, 2 cups of chicken broth, and the juice and zest of 1 lemon. Bring to a boil.
  • Place the browned chicken on top of the rice, cover, reduce heat to low, and simmer for about 20 minutes.
  • Once cooked, fluff the rice with a fork and garnish with fresh parsley.

Notes

Serve with chilled white wine or lemonade. A side of Greek salad or roasted vegetables complements the dish well.
