Candy Base

  • 1/2 cup cooked mashed potatoes, cooled to room temp These serve as the base for the candy, giving it a unique texture.
  • 2 tablespoons salted butter, softened Salted butter adds richness; unsalted can be used if needed.
  • 1 teaspoon vanilla extract Use pure vanilla extract for best flavor.
  • 6-8 cups powdered sugar, plus more for dusting Essential for sweetness; alternatives like coconut powdered sugar can be used.

Filling

  • 1/3 cup creamy peanut butter Warm for easier spreading.

Preparation

  • Place the cooled mashed potatoes into a large mixing bowl.
  • Add the softened salted butter and beat with an electric mixer until smooth.
  • Mix in the vanilla extract until thoroughly combined.
  • Gradually add the powdered sugar, mixing one cup at a time until a dough-like consistency is achieved.
  • Dust a large piece of wax or parchment paper with powdered sugar and place the potato mixture on it.
  • Dust more powdered sugar on top and roll the mixture out to approximately 1/4 inch thick.
  • Spread the peanut butter evenly over the top of the rolled-out mixture.
  • Roll the dough tightly into a log, ensuring no filling oozes out.
  • Wrap the log in plastic wrap and refrigerate for about 10 minutes to set.
  • Once set, unwrap and slice into 1/4-1/2 inch pieces to serve.

Notes

Store in an airtight container in the fridge for up to two weeks. Can be frozen by wrapping slices in plastic wrap and placing them in a resealable bag.
