  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup honey or maple syrup Choose based on preference.
  • 1/2 cup peanut butter or almond butter Use sunflower seed butter for nut-free.
  • 1 large egg or flax egg (for vegan option) Flax egg: 1 tablespoon of ground flaxseed mixed with 2.5 tablespoons of water.

Optional Add-Ins

  • 1/2 cup chocolate chips or dried fruit Gently fold into the cookie batter.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
  • In another bowl, mix together brown sugar, honey (or maple syrup), peanut butter, and egg until smooth.
  • Gradually add the dry ingredients into the wet mixture, stirring just until combined.
  • If using, gently fold in chocolate chips or dried fruit.

Baking

  • Drop spoonfuls of dough onto the lined baking sheet.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.

Notes

Store the cookies in an airtight container at room temperature for up to a week. They can also be frozen for later enjoyment.
