Instructions
Preparation
In your slow cooker, combine the beef chunks, baby potatoes, minced garlic, and chopped onion.
Melt 1/2 cup of unsalted butter in a small saucepan. Mix in the beef broth, adding salt and pepper to taste.
Pour the melted butter and broth mixture over the beef and potatoes in the slow cooker.
Cooking
Cover and cook on low for 6-8 hours or until the beef is tender.
If short on time, you can cook on high for 3-4 hours.
Serving
Serve hot and garnish with chopped fresh parsley.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. This dish may also be frozen for up to 3 months.
