  • 4 pieces chicken breasts Thighs can be used for a richer flavor.
  • 1 cup apple cider Can substitute with white wine or chicken broth.
  • 1 cup heavy cream For a lighter option, substitute with half-and-half.
  • 2 tablespoons olive oil
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • for garnish fresh thyme

Preparation

  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Season the chicken breasts with salt and pepper on both sides, and then add them to the skillet.
  • Cook for about 5 minutes on each side until browned. Remove chicken from skillet and set aside.
  • In the same skillet, sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
  • Pour the apple cider into the skillet, deglazing the pan by scraping down any browned bits.
  • Return the chicken to the skillet, cover it with the apple cider mixture, and let it simmer for 20 minutes.
  • After 20 minutes, stir in the heavy cream and let it simmer for an additional 5 minutes.
  • Serve the chicken hot, garnished with fresh thyme.

Notes

Avoid overcrowding the pan when searing the chicken. For storage, refrigerate in an airtight container for up to 3 days, or freeze for up to 2 months.
