  • 4 cups chicken broth Use homemade broth for richer taste.
  • 2 packs ramen noodles (discard the seasoning packets) Use gluten-free ramen if needed.
  • 2 tablespoons soy sauce Use gluten-free soy sauce for gluten-free version.
  • 1 tablespoon chili paste Adjust for desired spice level; substitute with sriracha or red pepper flakes.
  • 1 tablespoon sesame oil For cooking.
  • 2 cloves garlic, minced Key flavor base.
  • 1 inch ginger, grated Key flavor base.
  • 2 stalks green onions, sliced For garnishing.
  • 1 cup bok choy (or other greens) Substitute with spinach or kale if desired.
  • Boiled eggs (optional for topping)
  • Sesame seeds (for garnish)

Instructions
 

Preparation

  • In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1-2 minutes until fragrant.
  • Add the sliced chicken breasts to the pot. Cook until they are golden and no longer pink, about 5-7 minutes.
  • Pour in the chicken broth and bring to a boil.
  • Add the ramen noodles and chili paste. Stir well and let it simmer for about 4-5 minutes, until the noodles are tender.
  • Add the bok choy and allow it to wilt for just 1-2 minutes.
  • Stir in the soy sauce and garnish with sliced green onions and boiled eggs if desired. Serve hot!

Notes

A squeeze of lime juice just before serving can brighten up the flavors beautifully. For storage, refrigerate for up to 3 days in an airtight container. Freeze without the noodles for up to 2 months.
