Wet Ingredients

  • 1 cup milk Use cow's milk or any milk substitute for a dairy-free version.
  • 1 large egg Room temperature is best.
  • 2 tablespoons melted butter Can be substituted with coconut oil or dairy-free butter.

For Serving

  • to taste maple syrup or honey For drizzling on top.

Preparation

  • In a large mixing bowl, whisk together the einkorn flour, baking powder, sugar, and salt until well mixed.
  • In another bowl, whisk together the milk, egg, and melted butter until fully combined.
  • Pour the wet ingredients into the dry mixture. Stir gently until just combined; a few lumps are okay.

Cooking

  • Heat a non-stick skillet or griddle over medium heat. Coat lightly with butter or oil.
  • Pour 1/4 cup of the batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown, approximately 2-3 minutes per side.

Serving

  • Serve warm with maple syrup or honey and your favorite toppings.

Notes

Do not overmix the batter and preheat the skillet to ensure the pancakes cook evenly. Toppings can include fresh fruit, nuts, or chocolate chips.
