  • 1 can Canned Diced Tomatoes Add acidity and sweetness.
  • 2 medium Carrots Diced for sweetness.
  • 2 stalks Celery Chopped finely for crunch.
  • 1 medium Bell Pepper Any color, diced.
  • 1 medium Onion Finely chopped for depth.
  • 3 cloves Garlic Minced for richness.
  • 1 teaspoon Smoked Paprika For subtle smoky warmth.
  • 1 teaspoon Ground Cumin Adds earthy notes.
  • 1/4 cup Fresh Herbs Parsley or Cilantro, chopped for garnish.
  • Salt and Pepper to taste Essential for flavor.

Preparation

  • Rinse the lentils under running water to remove any dirt or debris.
  • In a large pot, heat a splash of olive oil over medium heat. Add the diced onion, minced garlic, and chopped celery. Cook for about 5 minutes, or until the onions are translucent.
  • Add the diced carrots and bell pepper to the pot and stir well to combine. Cook for 5-7 minutes.
  • Stir in the smoked paprika and ground cumin. Cook for an additional 1-2 minutes.
  • Add the rinsed lentils, canned diced tomatoes with their juices, and vegetable broth. Stir well.
  • Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 30-35 minutes.
  • Once cooked, season with salt and pepper to taste.
  • Stir in the freshly chopped herbs before serving.
