  • 1 pound Ground beef or turkey Turkey is a leaner alternative.
  • 2 cups Cooked rice Long-grain white or brown rice recommended.
  • 1 cup Diced onions
  • 2 cloves Minced garlic
  • 8 ounces Tomato sauce
  • 1 tablespoon Italian seasoning Use a homemade mix if needed.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 3 medium Bell peppers (red, yellow, green) Choose peppers that stand straight up.
  • 2 cups Shredded mozzarella cheese Feel free to mix in other cheeses.
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh parsley or basil For garnishing.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add your ground beef or turkey and brown it, breaking it apart with a spatula.
  • Add the diced onions and sauté until translucent, then add minced garlic and cook for another minute.
  • Mix in the cooked rice, tomato sauce, Italian seasoning, salt, and pepper until everything is well combined.
  • Prepare the bell peppers by cutting off the tops and removing the seeds.
  • Stuff the meat and rice mixture into each bell pepper and place them upright in a baking dish.
  • Sprinkle mozzarella and Parmesan cheese generously on top of the stuffed peppers.
  • Cover the baking dish with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbling and golden brown.
  • Garnish with freshly chopped parsley or basil before serving.

Notes

Don’t overstuff the peppers and check for seasoning before stuffing. High-quality cheese enhances flavor.
