  • 1 cup cooked rice Pre-cooked or leftover rice works great.
  • 1 cup shredded cheese Cheddar or mozzarella preferred, but gouda or pepper jack can be used.
  • 1/2 cup milk Dairy-free options available using soy or almond milk.
  • 1/2 cup diced onion
  • 2 large eggs Can substitute with flax eggs for a vegan version.
  • to taste Salt and pepper Adjust to preference.
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon nutmeg (optional)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the spinach, cooked rice, shredded cheese, milk, diced onion, eggs, salt, pepper, garlic powder, and nutmeg.
  • Mix until well combined.
  • Pour the mixture into a greased baking dish.

Cooking

  • Bake for 25-30 minutes, or until the casserole is set and the top is golden.
  • Let cool for a few minutes before serving.

Notes

For best results, don't overmix the batter and check for doneness early. Customize with different cheeses, spices, or additional vegetables as desired.
