For the Salmon

  • 2 fillets Salmon (Choose fresh, skin-on for crispy texture and juicy flakes.) Fresh salmon is best for flavor and texture.
  • 1 tablespoon Lemon zest Provides the bright, tangy burst.
  • 2 tablespoons Lemon juice Drizzle before baking.
  • 2 tablespoons Fresh herbs (Mix of dill, parsley, thyme.) Feel free to use just one type or switch it up with basil or cilantro.
  • 2 cloves Garlic Mince finely.
  • 2 tablespoons Olive oil Helps seal in moisture.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

For the Salad

  • 4 cups Mixed greens (Or baby arugula.)
  • 1 cup Cherry tomatoes Halved.
  • 1 cup Cucumber Sliced.
  • 2 wedges Extra lemon For squeezing.

Preparation

  • Preheat the Oven: Set your oven to 200°C (400°F). This high temperature will help achieve a crispy skin on the salmon.
  • Prepare the Marinade: In a bowl, mix the lemon zest, lemon juice, fresh herbs, minced garlic, olive oil, salt, and black pepper.
  • Marinate the Salmon: Place the salmon fillets in a baking dish and pour the marinade over them. Ensure the fillets are well coated.
  • Bake the Salmon: Place the baking dish in the preheated oven and bake for 12-15 minutes.

Salad Preparation

  • Prepare the Salad: While the salmon is baking, toss together the mixed greens, cherry tomatoes, and cucumber in a large bowl.

Serving

  • Plate the Dish: Once the salmon is cooked, serve it on a plate with the salad. Add extra lemon wedges for squeezing on top.

Notes

Salmon can be served with a side of roasted vegetables or quinoa. Store leftovers in an airtight container for up to 2 days. For long-term storage, salmon can be frozen for up to 3 months. Avoid microwaving to reheat for best results.
