  • 2 large ripe bananas Slightly spotted for natural sweetness
  • 1/4 cup honey Drizzle generously
  • 1 teaspoon ground cinnamon Optional
  • 1/2 cup chopped nuts Optional, like walnuts or pecans
  • 1/2 cup Greek yogurt Optional, for serving

Preparation

  • In a small bowl, combine the warm water and the packet of active dry yeast. Stir gently until the yeast is dissolved. Let it sit for about 5-10 minutes until frothy.
  • In a large bowl, combine the flour, salt, and optional ground cinnamon. Stir until well blended.
  • Add the olive oil and mashed ripe bananas to the yeast mixture, mixing well to combine.
  • Pour the banana-yeast mixture into the dry ingredients. Stir until just combined; a slightly sticky dough is what you want.
  • Lightly flour a clean surface and knead the dough for about 5 minutes until it becomes elastic and smooth.
  • Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm spot for about 1 hour, or until doubled in size.
  • Once risen, punch down the dough to release air. Transfer to a floured surface and shape it into a flat circle or rectangular slab about ½ inch thick.
  • While you’re shaping, preheat your oven to 425°F (220°C).
  • Brush the top of the flatbread with honey and sprinkle with chopped nuts, if using. Add a light dusting of cinnamon for extra flavor.
  • Place the flatbread on a parchment-lined baking sheet and bake for 15-20 minutes or until golden brown.

Notes

Serve warm for the best experience. Consider cutting the flatbread into smaller pieces for sharing. Optional: Add a dollop of Greek yogurt on the side for a refreshing creaminess.
