  • 1 package Potato Gnocchi Store-bought or homemade
  • 4 tablespoons Unsalted Butter Melted for sauce
  • 4 cloves Garlic Cloves Fresh and minced
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Bell Peppers Choose colorful varieties
  • 1 medium Zucchini Sliced or in half-moons
  • 1 cup Cherry Tomatoes Halved
  • 2 cups Spinach Fresh leaves
  • 1 small Red Onion Thinly sliced
  • 1/4 cup Grated Parmesan Cheese For serving
  • 2 tablespoons Fresh Parsley Chopped for garnish

Preparation

  • Bring a large pot of salted water to a rolling boil. Add the gnocchi and cook according to package instructions (usually 2-3 minutes until they float). Drain and set aside.
  • In a large pan over medium heat, melt the butter. Add the sliced red onion and minced garlic, cooking until fragrant—about 2-3 minutes.
  • Stir in the chopped bell peppers and zucchini, cooking until they are tender, approximately 5-7 minutes.
  • Add the halved cherry tomatoes and spinach, cooking until the spinach is wilted and the tomatoes are slightly softened (about 3 minutes).
  • Return the cooked gnocchi to the pan and toss everything together gently, seasoning with salt and pepper.
  • Take off the heat and plate. Sprinkle with grated Parmesan and freshly chopped parsley for a pop of flavor.

Notes

Gnocchi can be made from scratch or store-bought. For a lighter version, olive oil can replace butter. Spinach can be substituted with kale or Swiss chard.
