  • 4 slices slices of focaccia bread You can substitute with brioche, sourdough, or traditional white bread.
  • 2 large eggs Use an egg substitute for a vegan version.
  • 1/2 cup milk Whole milk is recommended, but feel free to use any milk alternative.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • as needed Butter or oil for cooking Use enough to coat your skillet.

Preparation

  • In a medium-sized bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  • Heat a non-stick skillet or griddle over medium heat and add butter or oil to coat the surface.
  • Dip each slice of focaccia bread into the egg mixture, allowing it to soak for about 10 seconds on each side.
  • Place the soaked bread in the skillet and cook until golden brown, about 2-3 minutes per side.
  • Serve warm with maple syrup and a light dusting of powdered sugar if desired.

Notes

Use slightly stale bread for best results. Experiment with toppings and flavors.
