Onion Mixture

  • 2 large onions, thinly sliced Yellow onions are classic for caramelizing.
  • 2 tablespoons butter Combines with olive oil to enhance flavor.
  • 1 tablespoon olive oil Prevents butter from burning.
  • 2 cloves garlic, minced Adds aroma and flavor.

Sauce Ingredients

  • 1 cup beef or vegetable broth Vegetable broth for vegetarian version.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 cup Gruyère cheese, shredded Substitute with Swiss cheese or sharp cheddar if necessary.
  • to taste Salt and pepper
  • for garnish Fresh parsley Optional for serving.

Preparation

  • In a large skillet, heat the butter and olive oil over medium heat.
  • Add the sliced onions and cook, stirring frequently, for about 15-20 minutes until caramelized.
  • Add minced garlic and cook for one more minute, stirring constantly.
  • Pour in the broth and let it simmer for about 5 minutes.
  • Stir in the heavy cream and simmer until thickened.
  • Meanwhile, cook the pasta according to package instructions until al dente.
  • Drain the pasta, reserving a cup of pasta water.
  • Add the drained pasta to the skillet and toss with the onion sauce.
  • Stir in the shredded Gruyère cheese until melted and well combined.
  • Season with salt and pepper, garnish with fresh parsley and serve warm.

Notes

For added flavor, you can use a splash of white wine when adding the broth, or experiment with herbs like thyme or rosemary.
