  • 1 pound ground beef (or turkey) Substitute with lentils for a vegetarian version.
  • 1 can (15 oz) kidney beans, drained and rinsed Any type of beans works great.
  • 1 can (15 oz) black beans, drained and rinsed Feel free to mix and match beans.
  • 1 can (28 oz) crushed tomatoes
  • 1 onion diced Use fresh for enhanced flavor.
  • 2 cloves garlic, minced Fresh garlic is recommended.
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste Go easy on the salt.
  • Optional toppings: shredded cheese, sour cream, green onions, or jalapeños

Cooking Instructions

  • Brown the ground beef or turkey in a pan over medium heat until it's cooked through. Drain the excess fat.
  • Place the browned meat in the crockpot along with the beans, crushed tomatoes, onion, garlic, chili powder, cumin, salt, and pepper. Stir everything well.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Before serving, taste the chili and adjust seasoning as needed.
  • Ladle the chili into bowls and top with your favorite toppings.

Notes

For best results, serve with cornbread or tortilla chips. Store leftovers in an airtight container for up to 4 days. Freezable for up to 3 months.
