Preparation

  • Wash and slice the zucchini into thin strips, about 1/4 inch thick.
  • Set up your breading station with flour, beaten eggs, and a mixture of panko, Parmesan cheese, garlic powder, Italian herbs, salt, and pepper in separate bowls.

Breading Zucchini

  • Coat each zucchini strip in flour, dip into the beaten eggs, and then coat with the breadcrumb mixture.
  • Arrange the breaded zucchini fries on a lined baking sheet in a single layer.

Baking
