Ingredients
  

For the Chicken Filling

  • 1 pound boneless chicken breast, finely diced You can also use ground chicken or turkey.
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce, low-sodium preferred For a gluten-free option, swap it with tamari.
  • 1 tablespoon fresh ginger, grated
  • 1 cup carrots, shredded
  • 1 cup bell peppers, diced
  • 1/4 cup green onions, thinly sliced
  • 1/2 cup water chestnuts, chopped

For the Wraps

  • 8 leaves butter lettuce, soft and pliable Choose large leaves for sturdier wraps.
  • 1 lime fresh lime juice, squeezed Serve with extra lime wedges.
  • 1/4 cup cilantro, chopped For garnish.

Instructions
 

Prepare the Chicken Filling

  • Heat oil in a large skillet over medium heat and sauté minced garlic and grated ginger until fragrant, about 1 minute.

Cook the Chicken

  • Add finely diced chicken breast to the skillet, cooking until no longer pink, about 5-7 minutes. Stir frequently.

Add the Veggies

  • Stir in shredded carrots, diced bell peppers, chopped water chestnuts, and sliced green onions. Cook for 3-4 minutes until veggies are tender.

Season the Mixture

  • Pour in soy sauce and stir, cooking for another minute to absorb flavors.

Prepare the Lettuce Wraps

  • Carefully remove butter lettuce leaves and wash them gently. Pat dry.

Finish and Serve

  • Squeeze fresh lime juice over the filling and garnish with chopped cilantro before serving.
