  • 2 cups cooked chicken, shredded Use leftovers or rotisserie chicken
  • 1 cup cooked rice (white or brown) Brown rice adds more fiber, or use quinoa or cauliflower rice for low-carb
  • 1 cup black beans, drained and rinsed Canned black beans for convenience
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 each avocado, diced
  • 1 cup shredded lettuce Optional cilantro for added flavor
  • 1 teaspoon taco seasoning Homemade option: chili powder, cumin, garlic powder, onion powder
  • to taste salt and pepper
  • for serving lime wedges For an extra kick of brightness

Instructions
 

Preparation

  • Combine shredded chicken and taco seasoning in a large bowl. Mix well.
  • In individual serving bowls, add a scoop of cooked rice.
  • Layer seasoned chicken onto the rice, followed by black beans, corn, diced tomatoes, and avocado.
  • Top with shredded lettuce.
  • Season with salt and pepper to taste.
  • Serve with lime wedges and optional sides.

Notes

Store in airtight containers for up to 3-4 days. You can meal prep by assembling ingredients separately.
