Main Ingredients

  • 2 cups cooked chicken, shredded Use rotisserie chicken for added convenience.
  • 1 cup frozen mixed vegetables Fresh vegetables can be used if preferred.
  • 1 can cream of chicken soup For a healthier option, consider making your own cream substitute.
  • 1 cup chicken broth
  • 1 cup Biscuit Mix You can make your own substitute using flour, baking powder, and salt.
  • 1/2 cup milk
  • to taste Salt and pepper Always taste before serving!

Preparation

  • In a slow cooker, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, and chicken broth. Mix well.
  • In a bowl, mix the Biscuit Mix and milk until just combined. Avoid overmixing.
  • Drop spoonfuls of the Biscuit mixture over the chicken mixture in the slow cooker.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours.
  • Before serving, season with salt and pepper to taste. Stir gently.

Notes

Store leftovers in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or oven.
