Vegetables

  • 2 cups fresh spinach leaves
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 1 cup mushrooms Sliced.

Protein

  • 2 cups cooked chicken breast Diced.

Cheese and Fats

  • 1 cup sharp cheddar cheese Shredded.
  • 2 tablespoons olive oil or butter

Seasonings

  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes Adjust to taste.

Preparation

  • Heat the olive oil or butter in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes, or until translucent. Add minced garlic and cook for an additional 1 minute.
  • Stir in the long-grain rice and toast it for about 1-2 minutes, ensuring that each grain is coated in the oil or butter.
  • Add the chicken or vegetable broth to the skillet and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed.
  • Once the rice is cooked, stir in the fresh spinach, cooked chicken breast, mushrooms, and red pepper flakes. Cook for another 2-3 minutes until the spinach wilts and the mushrooms are heated through.
  • Sprinkle the sharp cheddar cheese over the top, cover the skillet, and allow it to melt for 2-3 minutes.

Notes

For a vegan version, substitute cheese with a plant-based alternative. Adjust ingredients for dietary preferences as needed. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for 2-3 months.
