Ingredients
  

Vegetables

  • 2 cups broccoli florets
  • 2 cups sliced carrots
  • 1 cup cherry tomatoes, halved
  • 1 cup mushrooms, sliced

Cheese

  • 1 cup shredded mozzarella cheese Can substitute with gouda or cheddar.
  • 1 cup grated Parmesan cheese

Flavorings

  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Others

  • 1 tablespoon Olive oil

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Wash and chop your broccoli, carrots, mushrooms, and cherry tomatoes.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  • Add in the chopped vegetables and mix well. Season with salt, pepper, oregano, and thyme. Cook for another 5 minutes.
  • Transfer the sautéed veggie mixture to a baking dish. Layer the mozzarella and Parmesan cheese evenly over the top.

Baking

  • Place the baking dish in the preheated oven and bake for about 25-30 minutes until the cheese is bubbly and golden.
  • Let it sit for a few minutes after taking it out of the oven to make serving easier.

Notes

Serve with crusty bread or a fresh garden salad. Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave.
